Bringing luxury jelly to Arcade Food Hall
London 2022-3: The Jelladrome by Bompas & Parr and JKS Restaurants was a pioneering luxury dessert counter at Arcade Food Hall Centre Point, New Oxford Street. The dessert concession debuted two new brands – Benham & Froud, a luxury jelly company, and Marshall’s, dispensing fancy ices inspired by the remarkable Agnes B. Marshall. It serves shareable architectural trifles layered with jelly and blancmange, boozy jelly shots and nostalgic penny licks.
A mouth-watering revival
The penny lick – flavoured ices served on a reusable glass personal pedestal – was banned after 1899 because of a perceived link with the spread of disease, including tuberculosis. It would appear they were never again legalised for street vendors as they were replaced by the edible cone. Working with British glass manufacturers John Moncrieff Ltd., Benham & Froud presents the classic lick reborn after 122 years of unlawfulness – with a rigorous modern-day cleaning routine.
