Future of Food & Drink 2025

We explore the future of Food and Drink for 2025 and beyond

London, 2025: For our eighth annual instalment of the Future of Food and Drink, Bompas & Parr explored the thresholds of the subjective and the social; from the quantum to the romantically sublime. We looked inwards to the complex workings of the body, and outward to the wider food systems we hold in place, looking at food and drink through a critically creative lens that combines wider philosophical and scientific breakthroughs with cultural nuances that we saw emerge toward the end of 2024.

Presented at The Mills Fabrica on 8th January 2025, the Future of Food and Drink 2025 live event included the creation of food and drink samples from the Bompas & Parr development kitchen, and sponsored refreshments and samples from Kera Protein, TOAST Ale and Yealands Wine. We gave our audience trigeminal pastels that triggered their facial nerves, sampled innovative chicken feather protein nuggets, and hosted a special rock licking ceremony that aimed to connect audiences with ancestral memories locked in our DNA.

Following a number of drivers that provide contours for mapping the future of food and drink, the Bompas & Parr studio identified six core insights and predictions that
will shape how we might experience the future of food and drink.

This report was focused on six key food and drink-focused predictions:

Shocking Dinners
Exploring dining experiences that elicit strong feelings and emotions through nerve triggering, and how they influence taste and flavour.

Eating the Inedible
Diving deep into the transformation of the inedible into the food and drink of the future.

Quantum Possibilities
Soul meets science to create new quantum food and drink futures.

Strangescaping
Environmental storytelling comes to our napkins, tables and drinks dispensers, providing finers with extra sensorial stimulus in order to generate new ideas and experiences.

The Flavours of Memory
Through the examination of synchronising sensations, this insight explores how taste and memory interact.

Savourmentality
Stepping away from convenience and extrapolating the senses that surround food to push its possibilities - ultimately savouring it in every way imaginable.

Going Beyond Trends

Sometimes provocative, always inspiring – the Future of Food and Drink is cut directly from the heart of what we do at the Bompas & Parr studio everyday. Building on 17 years of experience across a wide range of sectors, we combine and crystallise the outlooks of architects, development chefs, scientists, designers, creatives, strategists, researchers and makers.

Our Future of Food & Drink leverages the studio’s capacity to consider and develop nascent ideas before they have already reached critical mass. Meaning that we don’t copy and paste - we actively interrogate. We intend to initiate change as much as we report on it.
